Chicken Tenders with Low Sugar BBQ Sauce

I had someone ask me the other day how I balance my diet with my family’s eating habits. Well, my kids are kids. They like PB & J, pizza, and chicken nuggets just like every other American kid. They are not on a diet, nor should they be. I do believe in balance in my own life and my families lives. I try to help my kids get a balance of foods they like with new healthier options to try. I want them to learn to branch out, and get the idea that sometimes we eat food because it is good for our bodies and makes us feel good. I do this with the hopes that they will develop good habits as they grow up.

So today instead of opting for the frozen processed version of chicken nuggets, I decided to make a homemade healthier version. I did pan fry these in coconut oil. Don’t freak out. Healthy fats like coconut oil are good for the body. And remember kids need healthy options just like adults need healthy options.

These are loading with real food healthy calories for kids, and very low sugar with the BBQ sauce. My boys gobbled these down, and asked for more! Win for mom. 🙂 And you could even make this BBQ sauce for recipes for you too.

Ingredients:

2 tbsp MRM -USA superfood mesquite powder

1/3 cup low sugar ketchup (you can substitute tomato sauce, and stevia)

1/3 cup wheat bread crumbs

1 tsp coconut oil

1 egg

Directions:

Cut the chicken into strips. Dip raw chicken strips into egg, and next into the bread crumbs to cover. Heat 1 tsp of coconut oil in a pan and place chicken strips in the heated pan to cook. Turn the chicken strips after a few minutes until they are slightly golden. Then in a dish mix the low sugar ketchup and the MRM mesquite powder until thoroughly blended. Serve and the kids will love these.
