Chocolate Chip Protein Muffins

These were so good! I know what your thinking…”ok, here’s another recipe for dry protein muffins.” But they turned out really delicious. Even my kids ate them….and honestly that’s a true testimant to how yummy they were, because my kids are super picky!

INGREDIENTS:
2 cups of oatmeal
1 scoop MRM Veggie Elite Protien Powder in Dutch Chocolate
1.5 Tbsp Unsweetened Cocoa Powder
3/4 tsp baking powder
1/4 tsp Baking soda
1 1/2 cups Muscle Eggs
1/2 cup Apple Sauce
1 tsp stevia (or a little more if you like it sweeter)

First I blended up 2 cups of oatmeal in a food processor until very fine. They I added in one scoop of MRM Veggie Elite in Dutch chocolate, 1.5 Tbsp unsweetened cocoa powder, 3/4 tsp baking powder, 1/4 tsp baking soda, 1 1/2 cups of Chocolate muscle eggs, 1/2 c applesauce, and about 1 tsp of stevia (or maybe even a smidge more if you’d like it sweeter).

Blend all the ingredients up into a batter. Pour evenly into muffin cups and bake on 350 degrees for about 20 mins or until cooked all the way through.

Go ahead and take the muffins out of the oven, and place 5 chocolate chips on the top of each muffin. ENJOY!

  1. I don’t have any muscle eggs. Can I use anything else??

      You could try regular egg whites and add extra unsweetened cocoa powder. The muscle eggs are pretty sweet so you might need some extra stevia to add sweetness back in if the Muscle eggs aren’t being used.
