Tiramisu Protein Pancakes

These are amazing! A great weekend treat that feels like a treat but is still healthy. I love those types of treats!


I tweaked the recipe a bit from sparkpeople.com

1/3 cup rolled oats
1 scoop (30g) vanilla MRM Veggie Elite protein powder
1/2 teaspoon baking powder
1 egg whites (can use more if the batter is too thick)
1/4 cup strong brewed cold coffee
Stevia if wanted

For the Sweet “Cream” Filling
1/3 cup low-fat no-salt-added cottage cheese
1/2 large banana
1/8 teaspoon vanilla extract
Stevia if wanted
unsweetened cocoa powder for dusting

For the Pancakes
1. Heat a non-stick skillet or pancake griddle over medium heat.
2. In a small food processor or blender blend up oats, protein powder and baking powder, coffee and extracts, and egg whites.
3. Blend up until the mixture is thick like a batter. It will be thick like brownie mix…If the batter is too thick, you can add a little water. If it’s too thin…add a little more protein powder.
6. Let batter sit at least 5 minutes before continuing.
7. Spoon batter onto skillet surface, forming 3 medium-sized pancakes.
8.Cook 5-6 minutes per side, or until golden brown with crisp edges.

For the Cream Filling
Combine cottage cheese, banana, and extract in small food processor or blender and blend until smooth.

Serving Size: Makes 1 serving
